Description

Skip takeout and make this easy Ground Chicken Fried Rice Recipe. It’s fast, budget-friendly, and loaded with flavor. Perfect for busy nights or meal prep.


Ingredients

1 pound Ground Chicken

2 tablespoons sesame oil

2 tablespoons vegetable oil

1 cup frozen peas and diced carrots blend

3 large eggs, lightly beaten

4 cups cooked rice (preferably day-old)

3 tablespoons soy sauce

½ teaspoon salt

1 teaspoon pepper

3 green onions, sliced


Instructions

1. In a large skillet, sauté ground chicken in sesame oil and vegetable oil over medium-high heat until browned and cooked through, about 4–6 minutes. Remove and set aside.

2. Add frozen peas and carrots to the same skillet. Sauté for 2 minutes until heated.

3. Push vegetables to one side of the pan and pour in the eggs on the other side. Scramble until just set.

4. Return the chicken to the pan and mix with eggs and vegetables.

5. Add cooked rice, soy sauce, salt, and pepper. Stir everything together and sauté for another 3–5 minutes until heated through.

6. Top with sliced green onions and serve immediately.

Notes

Use cold, day-old rice to achieve the ideal fried rice texture.

Store leftovers in an airtight container in the fridge for up to 5 days.

To freeze, let cool completely and portion into freezer-safe containers. Thaw overnight in the fridge and reheat in a skillet.

Add chili oil, sriracha, or hoisin to adjust flavor and spice.
