Description

Mini Cadbury eggs cookies are the ultimate chewy, buttery, pastel-studded treat. Crunchy candy shell, melty chocolate, and soft cookie centers—these bake up perfect every time and bring year-round joy to your kitchen.


Ingredients

1 ½ cups all purpose flour (180 grams)

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

⅓ cup granulated sugar

1 egg

1 teaspoon vanilla

1 cup Cadbury Mini Eggs, lightly crushed (about a 9 ounce package)

½ cup chocolate chips


Instructions

1. Preheat oven to 350°F. Line baking sheets with parchment paper.

2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

3. In another large bowl, cream softened butter with brown and granulated sugar until light and fluffy.

4. Mix in the egg and vanilla until combined.

5. Gradually mix in dry ingredients until dough just comes together.

6. Fold in crushed Cadbury Mini Eggs and chocolate chips by hand.

7. Scoop dough onto prepared trays, spacing 2 inches apart.

8. Bake for 12 minutes until edges are golden and centers still soft.

9. Cool on tray for 5 minutes before transferring to rack.

Notes

Crush Mini Eggs coarsely to keep big candy chunks.

Chill dough if kitchen is warm to prevent spreading.

Add a pinch of sea salt before baking for extra flavor.

Cookies freeze well after baking—cool completely before storing.
