Description
Soft, chewy, buttery blondies loaded with colorful Cadbury Mini Eggs. This festive spring treat is easy to bake and always a crowd-pleaser.
Ingredients
1/2 cup (115g) unsalted butter, melted
1 cup (200g) brown sugar, packed
1 large egg
1 1/2 tsp vanilla extract
1/4 tsp salt
1 cup (125g) all-purpose flour
3/4 cup Cadbury Mini Eggs, crushed or whole (plus more for topping)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
2. In a large bowl, whisk together melted butter and brown sugar until smooth.
3. Add the egg and vanilla, whisking until combined.
4. Stir in salt and flour with a spatula until just mixed. Do not overmix.
5. Fold in 3/4 cup Cadbury Mini Eggs gently.
6. Spread batter into prepared pan and smooth the top.
7. Press extra Mini Eggs into the surface for decoration.
8. Bake 25–28 minutes, or until edges are golden and center is set.
9. Cool completely in the pan before slicing into squares.
Notes
Chop some of the mini eggs for texture variety.
Let the blondies cool fully before cutting for clean slices.
Blondies can be frozen for up to 2 months.
