Description
Lemon tiramisu is a refreshing, no-bake twist on the classic Italian dessert. It features layers of citrus-soaked ladyfingers, whipped mascarpone cream, and tangy homemade lemon curd, Perfect for spring, brunches, or sunny weekends.
Ingredients
For the Lemon Syrup:
1 cup water
1/2 cup lemon juice (fresh)
1/4 cup granulated sugar
Zest of 1 lemon
For the Mascarpone Cream:
16 oz mascarpone cheese, cold
1 cup heavy cream, cold
1/2 cup confectioners’ sugar
1 tsp vanilla extract
For the Lemon Curd:
3 egg yolks
1/2 cup lemon juice
1/2 cup granulated sugar
Zest of 1 lemon
4 tbsp butter, cubed
Assembly:
1 package ladyfinger biscuits
Extra lemon zest or slices for garnish
Instructions
1. In a saucepan, combine water, lemon juice, sugar, and zest. Heat over medium until sugar dissolves. Cool completely.
2. Beat mascarpone, heavy cream, confectioners’ sugar, and vanilla until stiff peaks form. Set aside.
3. Whisk egg yolks, lemon juice, sugar, and zest in a saucepan. Stir constantly over medium-low heat until thickened. Remove from heat and stir in butter. Chill until cool.
4. Quickly dip each ladyfinger in lemon syrup and line the bottom of a 9×13 dish.
5. Spread half the mascarpone cream evenly over ladyfingers.
6. Add another layer of syrup-dipped ladyfingers and spread remaining mascarpone cream.
7. Spoon lemon curd over top layer and spread gently.
8. Cover and chill for 6 hours or overnight before serving.
Notes
Use crisp ladyfingers to prevent sogginess.
Make lemon curd up to 2 days in advance.
Garnish with mint or powdered sugar for a fresh finish.
