Pistachio Tiramisu Recipe – A No-Bake Spring Favorite

Description

This pistachio tiramisu has all the creamy, dreamy flavor of classic tiramisu, layered with pistachio mascarpone cream and coffee-soaked ladyfingers. It’s a no-bake dessert that’s elegant, nutty, and unforgettable.


Ingredients

1 cup strongly brewed coffee

1 tablespoon rum, optional

1/4 teaspoon almond extract

1 7-ounce package ladyfingers

4 large eggs, separated

2/3 cup granulated sugar, divided

16 ounces mascarpone, cold

1/3 cup pistachio paste

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/3 cup pistachios, very finely chopped


Instructions

1. Brew the coffee and mix with almond extract and optional rum in a shallow bowl.

2. Separate eggs into whites and yolks.

3. Whip egg whites with 1/3 cup sugar until stiff peaks form, about 3 minutes.

4. In another bowl, beat yolks with remaining 1/3 cup sugar until pale and fluffy.

5. Add mascarpone, pistachio paste, vanilla, and almond extract to yolk mixture and beat until smooth.

6. Fold yolk mixture into the whipped egg whites in two additions until fully combined.

7. Quickly dip ladyfingers in coffee mixture (both sides) and arrange in a single layer in a 9×9-inch pan.

8. Spread half the mascarpone mixture over ladyfingers.

9. Repeat with remaining ladyfingers and mascarpone mixture.

10. Top with finely chopped pistachios.

11. Chill for at least 4 hours or overnight before serving.

Notes

Don’t soak the ladyfingers too long or they’ll fall apart.

For a stronger pistachio flavor, use roasted pistachio paste.

Can be made a day ahead—flavor improves with time.
