Description
Creamy, tangy, and egg-free deviled potatoes make the perfect plant-based party snack. Full of flavor and easy to prepare ahead.
Ingredients
1½ lbs baby potatoes
½ cup Chosen Foods Avocado Oil Mayo, vegan mayo
1 tbsp mustard
1 pickle, finely diced
¼ cup chives, chopped
1 tsp salt
1 tsp black pepper
½ tsp paprika
Instructions
1. In a stock pot, add the potatoes and cover with water. Add salt and bring to boil. Cook until fork tender, about 18 minutes. Drain.
2. Once potatoes are cool, slice each lengthwise. Scoop out insides using a spoon or melon baller, keeping a small layer around edges. Transfer flesh to a bowl and set skins aside.
3. Add mayo, mustard, pickle, chives, salt, and pepper to the bowl. Mash together until smooth.
4. Spoon filling back into potato skins, or use a piping bag for a cleaner look.
5. Optional: Process filling in a food processor for 5–10 seconds before piping.
6. Top with paprika and extra chives as desired. Chill before serving. Store in fridge for up to 3 days.
Notes
Use any size potato you have on hand—just make sure they’re tender.
Add black salt (Kala namak) for an egg-like flavor.
Easy to scale for larger gatherings.
Filling can be prepped ahead. Chill enhances flavor.
