Description

This crunchy chicken burger recipe delivers a crispy, juicy, golden-fried chicken breast stacked with garlic mayo, lettuce, and pickles on a toasted bun. Better than takeout, perfect every time.

2 chicken breasts or 4 boneless thighs

3/4 cup buttermilk

1 1/2 tsp kosher salt

1 large egg

2/3 cup mayonnaise

3/4 tsp fresh garlic, grated

3/4 cup all-purpose flour

1/4 cup cornstarch

1/4 tsp celery salt

1/2 tsp sweet paprika

1/8 tsp cayenne pepper

1/2 tsp onion powder

1 tsp garlic powder

1/4 tsp mustard powder

1/4 tsp ground ginger

1/2 tsp dried thyme

1/2 tsp dried oregano

1 1/2 tsp black pepper

4 brioche or soft buns, toasted

Iceberg lettuce, shredded

2 tomatoes, sliced (optional)

2 dill pickles, sliced

3 cups vegetable oil for frying


Instructions

1. Pound chicken to 1 cm thickness for even cooking.

2. Whisk buttermilk, egg, and salt. Add chicken, marinate 3–24 hrs.

3. Prepare garlic mayo by mixing mayo and grated garlic.

4. Mix flour, cornstarch, and all seasonings in a bowl.

5. Add 2 tbsp marinade to the flour mix and stir to form clumps.

6. Heat oil to 350°F (180°C) in a deep pot.

7. Remove chicken from marinade, coat fully in seasoned flour.

8. Fry each piece 2–3 minutes per side, do not touch first 90 seconds.

9. Drain chicken on paper towels, let rest.

10. Spread garlic mayo on buns, layer with lettuce, tomato, chicken, and pickles.

11. Top with bun and serve immediately.

Notes
