These cottage cheese brownies are a rich, fudgy treat made in just one bowl. A true recette facile that comes together in 30 minutes chrono. This blender recipe is naturally gluten-free, high-protein, and perfect for healthy batch baking. Includes substitutions sans lactose for dairy-sensitive eaters.
Ingredients
¾ cup cottage cheese (160g)
1 large egg
½ cup unsweetened cocoa powder (42g)
½ cup powdered sweetener (80g)
2 tbsp smooth peanut butter (32g)
Pinch of sea salt (optional)
Instructions
1. Add all ingredients to a blender or mixing bowl.
2. Blend until the mixture is completely smooth.
3. Scrape sides to ensure even blending.
4. Grease and line a 5×5-inch baking dish.
5. Pour batter into dish and smooth the top.
6. Preheat air fryer to 160°C (320°F) or oven to 180°C (350°F).
7. Air fry for 19–22 minutes or bake for 24–26 minutes.
8. Cool completely, then chill in fridge for 30 minutes.
9. Slice and serve.
Notes
Makes 4 brownies.
Store in fridge for up to 5 days or freeze for up to 3 months.
Texture improves after chilling.
To make substitutions sans lactose, use lactose-free cottage cheese or vegan alternatives.
