Description

These Antojitos are creamy, cheesy, and spicy tortilla bites baked until golden and served with basil pesto sour cream dip, perfect for parties or snacks.


Ingredients

Scale

4 flour tortillas (10″)

8 oz cream cheese, softened

4 oz diced green chilies

1 cup shredded cheddar cheese

1/2 cup finely diced red onion

1/2 cup finely diced bell pepper

3 tbsp sour cream

1 tsp paprika

1 tsp garlic powder

1/2 tsp onion powder

1/8 tsp cayenne

For the dip:

1/2 cup sour cream

2 tbsp basil pesto


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet.

2. Mix cream cheese, cheddar, chilies, onion, bell pepper, sour cream, and spices until smooth.

3. Divide filling among tortillas and spread evenly.

4. Roll tortillas tightly, then slice at an angle into 5 pieces each.

5. Place on baking sheet and bake 8 minutes.

6. Switch oven to broil and cook 5 minutes until golden.

7. Mix sour cream with basil pesto for dipping.

8. Cool slightly before serving.

Notes

Prepare tortillas ahead of time and refrigerate. Slice, bake, and broil just before serving. Freeze unbaked rolls for longer storage and bake directly from frozen.
