Description
Soft and wholesome applesauce oatmeal muffins with warm cinnamon, tender crumb, and just-right sweetness. Simple pantry ingredients, quick mixing, and reliable bakery-style results.
Ingredients
1 3/4 cups all-purpose flour
1 cup oats (old-fashioned or quick-cooking)
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 cup milk
1/4 cup oil (canola or vegetable)
1 teaspoon vanilla extract
1 cup applesauce
1 tablespoon oats (optional, for topping)
Instructions
1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with nonstick spray.
2. In a bowl, whisk flour, oats, sugar, baking powder, cinnamon, baking soda, and salt until evenly combined.
3. In a second bowl, whisk egg, milk, oil, and vanilla until smooth.
4. Add wet mixture to dry ingredients, then add applesauce. Stir until just combined. Some small lumps are fine.
5. Divide batter among muffin cups, filling each about two-thirds full. Sprinkle a pinch of oats on top if desired.
6. Bake 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan 5 minutes, then transfer to a rack to cool completely.
Notes
For extra moisture, use unsweetened applesauce. For a heartier muffin, swap up to 1/2 cup flour with whole wheat flour. Add-ins: 1/2 cup chopped walnuts, almonds, raisins, or mini chocolate chips. Store airtight at room temperature up to 3 days, or freeze up to 3 months.
