Ingredients
For the Brownie Base:
1 package of brownie mix (plus ingredients as directed on the package)
For the Cheesecake Layer:
24 ounces (three 8-ounce packages) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/4 cup sour cream
1/4 cup heavy cream
For the Caramel Swirl:
1/2 cup caramel sauce (plus extra for drizzling)
For Garnish:
Whipped cream
Chocolate shavings
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
2. Prepare brownie mix according to package and bake in pan. Cool completely.
3. Reduce oven to 325°F (160°C).
4. Beat cream cheese and sugar until smooth. Add vanilla, eggs, sour cream, and heavy cream. Mix until creamy.
5. Pour cheesecake batter over cooled brownie base.
6. Drizzle half the caramel sauce over batter and swirl gently with knife.
7. Bake 1 hour 15 minutes until center is set but slightly jiggly.
8. Turn off oven, let cheesecake cool gradually inside.
9. Cool to room temperature, then refrigerate at least 4 hours or overnight.
10. Garnish with whipped cream, caramel drizzle, and chocolate shavings before serving.
Notes
Chill at least 4 hours before slicing. Avoid overmixing batter to prevent cracks. Store refrigerated for up to 5 days.
