Description
Cheesy Chicken Broccoli Orzo is a one-pan dinner made with tender chicken, fresh broccoli, and orzo in a creamy cheese sauce.
Ingredients
1 tablespoon olive oil
1 tablespoon butter
1 small onion, diced
2 cloves garlic, minced
1 cup orzo pasta
2 cups cooked chicken, chopped
2 cups broccoli florets, chopped small
2 cups chicken broth
1 cup milk
1 teaspoon salt
½ teaspoon pepper
1 cup shredded cheddar cheese
¼ cup grated Parmesan cheese
Instructions
1. Heat olive oil and butter in a large skillet over medium heat.
2. Add onion and sauté for 3–4 minutes until translucent.
3. Add garlic and orzo; toast for 2–3 minutes, stirring often.
4. Add cooked chicken and broccoli; stir to combine.
5. Pour in chicken broth and milk; season with salt and pepper.
6. Cover and simmer 10–12 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
7. Stir in cheddar and Parmesan until melted and creamy.
8. Add a splash of milk if needed to loosen the sauce.
9. Serve immediately with extra Parmesan and pepper.
Notes
Use pre-cooked chicken for convenience.
Substitute spinach or mushrooms for broccoli if desired.
Reheat with milk or broth to restore creaminess.
