2 teaspoons vanilla paste or orange extract

For the Citrus Curd:

2 eggs

2 egg yolks

3/4 cup sugar (or 1/2 cup for less sweetness)

1/2 cup orange juice

1 tablespoon orange zest

2 tablespoons lemon juice

1 teaspoon cornstarch

2 tablespoons unsalted butter

Pinch of salt

1/2 teaspoon orange extract (optional)

For the Whipped Cream:

1 1/4 cups heavy cream

1/3 cup powdered sugar

1 teaspoon vanilla paste or orange extract


Instructions

1. Prepare citrus curd: Rub zest into sugar. Combine with eggs, yolks, juice, salt, and cornstarch in a saucepan. Cook over medium heat, stirring until thickened. Strain, stir in butter, and chill.

2. Preheat oven to 350°F (175°C). Grease and line a 9-inch cake pan.

3. Rub orange zest into sugar. Whisk with eggs and vanilla until fluffy. Add olive oil, yogurt, and orange juice, mixing well.

4. Sift flour, baking powder, baking soda, and salt. Fold gently into wet mixture until just combined.

5. Pour batter into prepared pan and bake for 35 minutes, or until golden and springy. Cool in pan for 10 minutes, then transfer to rack.

6. Make whipped cream by beating cold cream, powdered sugar, and vanilla until medium peaks form.

7. Assemble: Top cooled cake with whipped cream, swirl in citrus curd, and garnish with dried orange slices or edible flowers.

Notes

Massage zest into sugar to maximize flavor before mixing.

Do not overmix batter after adding dry ingredients to maintain tenderness.

Freeze cake layers unfrosted for up to 3 months; thaw before topping.
