Ingredients
8 ounces cream cheese (softened)
2 large chicken breasts
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon butter
1 tablespoon olive oil
1/2 medium onion, chopped
3 cloves garlic, minced
3/4 cup chicken broth
1/2 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
Fresh chopped parsley, for garnish
Instructions
1. Microwave cream cheese until very soft, then cut into smaller pieces and set aside.
2. Cut chicken breasts in half lengthwise to create 4 thinner pieces. Season with garlic powder, salt, and pepper.
3. In a large skillet, heat butter and olive oil over medium-high heat.
4. Add chicken and cook 5–6 minutes per side until golden and cooked through (internal temperature 165°F). Transfer to a plate.
5. Reduce heat to medium, add onions, and sauté for 5–7 minutes until soft and lightly browned.
6. Add minced garlic and cook for 30 seconds.
7. Pour in chicken broth, then add cream cheese, Italian seasoning, and red pepper flakes.
8. Stir until sauce is smooth and creamy (this may take a few minutes).
9. Return chicken to the skillet, spoon sauce over top, and simmer 2–3 minutes to heat through.
10. Garnish with parsley and serve immediately.

For a lighter version, use low-fat or Neufchâtel cheese.
