Description

Creamy Chicken and Rice is a one pot meal with tender chicken, creamy rice, garlic, parmesan, and parsley.


Ingredients

Scale
  • 1/4 cup olive oil
  • 4 Tbsp unsalted butter divided
  • 1 medium onion finely diced
  • 2 large carrots grated or cut into matchsticks
  • 1 1/2 lbs boneless skinless chicken thighs trimmed and cut into 1 inch pieces
  • 2 tsp salt divided
  • 1/4 tsp black pepper freshly ground
  • 2 bay leaves optional
  • 1 cup dry white wine such as Chardonnay
  • 5 cups hot low sodium chicken broth
  • 2 cups medium grain rice such as Jasmine rice un rinsed
  • 1 head garlic
  • 1/3 cup fresh Italian parsley finely chopped
  • 1/2 cup shredded parmesan cheese plus more for serving

Instructions

  1. Heat olive oil and 2 Tbsp butter in a dutch oven over medium high heat. Add onion, carrots, and 1 tsp salt. Saute until soft and golden.
  2. Add chicken, bay leaves, 1 tsp salt, and pepper. Saute until golden on all sides.
  3. Increase heat and add white wine. Boil until mostly evaporated while scraping the bottom.
  4. Add hot chicken broth and rice. Place a whole garlic head cut side down in the center.
  5. Bring to a boil, reduce to low, cover, and simmer until rice is cooked about 15 minutes.
  6. Remove garlic head, stir in 2 Tbsp butter, parsley, and parmesan. Adjust creaminess as desired.
  7. Serve hot with extra parmesan and parsley.

Notes

For brown rice, increase cooking time to 45 minutes. Instant brown rice cooks in about 15 minutes like Jasmine rice.
