Description
Creamy Chicken and Rice is a one pot meal with tender chicken, creamy rice, garlic, parmesan, and parsley.
Ingredients

- 1/4 cup olive oil
- 4 Tbsp unsalted butter divided
- 1 medium onion finely diced
- 2 large carrots grated or cut into matchsticks
- 1 1/2 lbs boneless skinless chicken thighs trimmed and cut into 1 inch pieces
- 2 tsp salt divided
- 1/4 tsp black pepper freshly ground
- 2 bay leaves optional
- 1 cup dry white wine such as Chardonnay
- 5 cups hot low sodium chicken broth
- 2 cups medium grain rice such as Jasmine rice un rinsed
- 1 head garlic
- 1/3 cup fresh Italian parsley finely chopped
- 1/2 cup shredded parmesan cheese plus more for serving
Instructions
- Heat olive oil and 2 Tbsp butter in a dutch oven over medium high heat. Add onion, carrots, and 1 tsp salt. Saute until soft and golden.
- Add chicken, bay leaves, 1 tsp salt, and pepper. Saute until golden on all sides.
- Increase heat and add white wine. Boil until mostly evaporated while scraping the bottom.
- Add hot chicken broth and rice. Place a whole garlic head cut side down in the center.
- Bring to a boil, reduce to low, cover, and simmer until rice is cooked about 15 minutes.
- Remove garlic head, stir in 2 Tbsp butter, parsley, and parmesan. Adjust creaminess as desired.
- Serve hot with extra parmesan and parsley.
Notes
For brown rice, increase cooking time to 45 minutes. Instant brown rice cooks in about 15 minutes like Jasmine rice.
