Description
Creamy smothered chicken and rice is a comforting dinner made with tender chicken, rich sauce, and fluffy rice cooked perfectly on the stovetop.
Ingredients
2 lbs chicken thighs or breasts
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
2 tbsp olive oil
2 tbsp butter
1 small onion, diced
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 tsp dried thyme
1 tsp dried parsley
½ tsp salt
½ tsp black pepper
1 tsp cornstarch + 1 tbsp water (optional)
1½ cups long-grain white rice
3 cups water or chicken broth
Instructions
1. Coat chicken with salt, pepper, garlic powder, onion powder, and paprika. Heat olive oil and sear for 4–5 minutes per side.
2. Remove chicken. Melt butter, add onion, cook for 3 minutes. Stir in garlic.
3. Add broth, cream, thyme, parsley, salt, and pepper. Simmer 5 minutes. Add cornstarch slurry if needed.
4. Rinse rice. Boil water or broth, add rice, simmer 15 minutes. Rest 5 minutes, then fluff.
5. Return chicken to sauce. Simmer 10–15 minutes until tender.
6. Serve chicken over rice and pour sauce on top.
Notes
Bone-in chicken adds extra flavor but needs longer cooking.
Add mushrooms or spinach for variety.
Swap heavy cream with half-and-half for a lighter option.
Add red pepper flakes for a little heat.
