Description
These Easter no bake mini cheesecakes are easy to prep, fun to decorate, and perfect for spring. Creamy layers, pastel colours, and festive toppings make them a joyful Easter dessert.
Ingredients
6 oz shortbread cookies (approx. 12 round cookies)
1 tbsp unsalted butter, melted
2 tbsp cold water
1 packet unflavored powdered gelatin (1/4 oz or 2.5 tsp)
1 lb full-fat cream cheese, at room temperature
½ cup granulated sugar (3.5 oz)
½ tsp lemon juice
1 tsp vanilla bean paste
Pinch of salt
1 cup heavy cream, at room temperature
Assorted gel food coloring (4 colours recommended)
½ cup whipped cream (for topping)
Candy eggs (for decorating)
Sprinkles (for decorating)
Instructions
1. Place a silicone muffin pan on a baking sheet. Crush shortbread cookies into fine crumbs and mix with melted butter.
2. Press the crumb mixture into the bottom of each muffin cup to form the crust.
3. Hydrate the gelatin by sprinkling it over cold water. Let it sit for 5 minutes.
4. Beat the cream cheese until smooth. Add sugar, lemon juice, vanilla paste, and salt. Mix well.
5. Slowly mix in heavy cream until the filling is smooth. Melt the hydrated gelatin and stir it into the cheesecake filling.
6. Divide filling into 4 bowls and colour each with gel food colouring.
7. Layer the coloured fillings into the crust-lined muffin cups, smoothing each layer.
8. Freeze for at least 2 hours until firm.
9. Unmold the cheesecakes and refrigerate if not serving immediately.
10. Before serving, top with whipped cream, sprinkles, and candy eggs.
Notes
Use room temperature ingredients for a smooth filling.
Work quickly once gelatin is added to prevent clumps.
Wrap tightly if freezing ahead of time. Decorate just before serving.
