Description
Easy Chicken Breast and Green Beans is a one-pan dinner with tender chicken, crisp green beans, and a light honey soy glaze ready in under 30 minutes.
Ingredients
1 tablespoon vegetable oil + 1 teaspoon (separated)
2½ cups green beans, trimmed and cut into 1-inch pieces
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
2 teaspoons minced garlic
¼ cup low-sodium chicken broth or water
¼ cup soy sauce
3 tablespoons honey
2 teaspoons cornstarch
Salt and pepper to taste
Instructions
1. Heat 1 teaspoon of oil in a pan over medium heat.
2. Add green beans and cook for 3–4 minutes until tender-crisp. Remove and cover.
3. Wipe the pan clean and add remaining oil over high heat.
4. Season chicken with salt and pepper, then sear for 3–4 minutes per side.
5. Add garlic and cook for 30 seconds until fragrant.
6. Whisk together chicken broth, soy sauce, and honey in a bowl.
7. Mix cornstarch with 1 tablespoon cold water and set aside.
8. Return green beans to the pan and pour in the sauce.
9. Add cornstarch mixture, bring to a boil, and stir until the sauce thickens.
10. Serve hot with rice or noodles.
Notes
Use tamari or coconut aminos for a gluten-free version.
Add red pepper flakes for a spicy touch.
Store leftovers in an airtight container for up to 3 days.
