Ingredients
6 tsp oregano
3 tsp black peppercorns
3 tsp white peppercorns
1 tsp thyme
1 tsp crushed chili
1/2 cup paprika
2 tsp salt
1 tsp cayenne
5 boneless skinless chicken breasts
2 tbsp salted butter
Instructions
1. Add all dry ingredients into a bowl and mix well to create Cajun spice.
2. Season chicken breasts generously with Cajun spice, using about half to two-thirds of the mix.
3. Melt butter in a large pan over medium heat without burning it.
4. Cook chicken in the pan for 10–15 minutes on medium heat.
5. Flip and cook for another 10–15 minutes until fully cooked and blackened.
6. Remove from heat and let rest before serving.
Notes
You’ll have leftover Cajun spice mix to use for future meals.
Adjust cayenne to control the heat level.
