Perfect Pineapple Upside-Down Cake is a moist and fruity pineapple cake topped with caramelized pineapple rings and sweet maraschino cherries.
Ingredients
Topping:
½ cup brown sugar, packed
¼ cup salted butter, melted
Cake Ingredients:
1 (20-ounce) can sliced pineapple, drained (reserve juice)
12 maraschino cherries
1 ⅓ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup unsalted butter, softened
½ cup granulated sugar
¼ cup brown sugar, packed
1 large egg, room temperature
¼ cup sour cream
¼ cup milk
¼ cup pineapple juice (reserved)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9-inch pan.
2. Mix brown sugar and butter, spread on pan bottom.
3. Arrange pineapple rings and cherries over mixture.
4. Whisk flour, baking powder, and salt in a bowl.
5. Cream butter, granulated sugar, and brown sugar until fluffy.
6. Add egg, sour cream, milk, and pineapple juice; mix until combined.
7. Add dry ingredients and mix gently.
8. Spread batter evenly over pineapples.
9. Bake 45–50 minutes or until golden and toothpick comes out clean.
10. Cool 10–15 minutes, invert onto plate, and serve.
Notes
Pat pineapple slices dry before arranging to prevent excess moisture. Serve slightly warm for best flavor.
