This simple vanilla cake boasts a buttery, melt-in-your-mouth texture with a subtle sweetness that pairs beautifully with any frosting.
Ingredients
2 cups (240g) all-purpose flour
1 ½ cups (300g) granulated sugar
½ cup (113g) unsalted butter, softened
1 cup (240ml) whole milk, room temperature
3 large eggs, room temperature
2 ½ tsp baking powder
½ tsp salt
2 tbsp pure vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease two 8-inch pans lined with parchment.
2. Cream butter and sugar until light and fluffy, about 2-3 minutes.
3. Add eggs one at a time, mixing well after each.
4. Stir in vanilla extract.
5. Whisk flour, baking powder, and salt in a separate bowl.
6. Add half of the dry ingredients to butter mixture, then pour in milk.
7. Add remaining dry ingredients and mix until just combined.
8. Divide batter evenly into pans and smooth tops.
9. Bake 25-30 minutes or until a toothpick inserted comes out clean.
10. Cool in pans 10 minutes, then transfer to wire rack to cool completely.
Notes
Use room-temperature ingredients for smooth mixing. Avoid overmixing for a light, fluffy crumb.
