Ingredients
1 cup butter, softened
1 1/2 cups white sugar
2 teaspoons vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
4 egg whites
1 1/4 cups whole milk
Instructions
1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Mix in the vanilla extract.
4. In another bowl, sift together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk.
6. Beat the egg whites until soft peaks form, then gently fold them into the batter.
7. Divide the batter evenly between the prepared cake pans.
8. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
9. Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best texture, use room-temperature ingredients. Do not overmix once the egg whites are folded in.
