Description
Forgotten Chicken and Rice – a creamy, flavorful casserole made with chicken, rice, and soup. A comforting, no-fuss dinner classic.
Ingredients
1 lb boneless, skinless chicken breasts
2 cups instant rice (white or brown)
1 (10.5 oz) can cream of chicken soup
1 (10.5 oz) can cream of mushroom soup
1 (10.5 oz) can water (use empty soup can)
1 envelope onion soup mix
1 tbsp butter (for greasing)
Optional: 1 cup shredded cheddar cheese, 1–2 cups frozen vegetables, seasoning to taste
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter.
2. In a bowl, mix cream of chicken soup, cream of mushroom soup, water, and uncooked instant rice.
3. Pour mixture into the baking dish and spread evenly.
4. Add frozen vegetables or cheese if desired.
5. Place chicken breasts on top of the rice mixture.
6. Sprinkle onion soup mix evenly over the chicken.
7. Cover tightly with foil and bake for 60 minutes.
8. Remove foil, check doneness, and broil for 3–5 minutes if desired.
9. Let rest 5–10 minutes before serving.
Notes
Use instant rice for best results. Add cheese or veggies for a heartier meal. Rinse rice before baking to avoid stickiness.
