Description
A creamy, cheesy Garlic Butter Chicken and Rice Casserole made with tender chicken, garlic-infused butter, and mozzarella for the perfect comfort meal.
Ingredients
2 cups cooked white rice
2 cups shredded cooked chicken
3 tbsp butter
3 cloves garlic, minced
1 can (10.5 oz) cream of chicken soup
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 tsp dried parsley
Salt and pepper to taste
Instructions
1. Melt butter in a skillet over medium heat.
2. Add minced garlic and sauté for about 1 minute until fragrant.
3. In a large bowl, combine rice, shredded chicken, garlic butter, cream of chicken soup, and broth.
4. Add half the mozzarella, parsley, salt, and pepper. Stir well.
5. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
6. Spread mixture evenly and top with remaining mozzarella.
7. Bake 20–25 minutes until bubbly and golden.
8. Let rest for 5 minutes before serving.
Notes
For extra creaminess, use a mix of cream of chicken and mushroom soup or add cream cheese. Add broccoli or peas for variety.
