Ingredients
2 cups cooked white rice
2 cups shredded cooked chicken
3 tablespoons butter
3 cloves garlic, minced
1 can (10.5 oz) cream of chicken soup
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 teaspoon dried parsley
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a skillet over medium heat, melt the butter. Add minced garlic and sauté 1 minute until fragrant and lightly golden.
3. In a large bowl, combine cooked rice, shredded chicken, the garlic-butter mixture, cream of chicken soup, and chicken broth.
4. Add half the mozzarella cheese, dried parsley, salt, and pepper. Mix until evenly coated.
5. Spread the mixture evenly into the prepared baking dish.
6. Top with remaining mozzarella cheese.
7. Bake uncovered for 20–25 minutes, until bubbly and golden brown.
8. Remove from oven and let rest for 5 minutes before serving. Garnish with parsley if desired.
Notes
For extra creaminess, add cream cheese or sour cream to the mix.
Substitute cream of mushroom soup for a deeper flavor.
