Description

Greek Lemon Chicken and Potatoes is a rustic Mediterranean dish with juicy chicken, tender potatoes, and a zesty lemon garlic marinade.


Ingredients

Scale
  • 4 bone in skin on chicken thighs
  • 2 cups baby potatoes halved
  • 1/4 cup olive oil
  • 2 lemons juice and zest
  • 5 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley chopped for garnish

Instructions

  1. Combine olive oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper. Coat chicken thighs and marinate at least 30 minutes.
  2. Preheat oven to 400°F.
  3. Toss potatoes with olive oil, salt, and pepper.
  4. Arrange marinated chicken skin side up in baking dish. Place potatoes around chicken.
  5. Bake for 40 to 45 minutes until chicken reaches 165°F and skin is golden.
  6. Baste chicken and potatoes with pan juices halfway through.
  7. Rest a few minutes before serving. Garnish with parsley and lemon wedges.

Notes

For added flavor, marinate overnight. Serve with Greek salad, tzatziki, or warm pita bread.
