Greek Lemon Chicken and Potatoes is a rustic Mediterranean dish with juicy chicken, tender potatoes, and a zesty lemon garlic marinade.

- 4 bone in skin on chicken thighs
- 2 cups baby potatoes halved
- 1/4 cup olive oil
- 2 lemons juice and zest
- 5 cloves garlic minced
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh parsley chopped for garnish
Instructions
- Combine olive oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper. Coat chicken thighs and marinate at least 30 minutes.
- Preheat oven to 400°F.
- Toss potatoes with olive oil, salt, and pepper.
- Arrange marinated chicken skin side up in baking dish. Place potatoes around chicken.
- Bake for 40 to 45 minutes until chicken reaches 165°F and skin is golden.
- Baste chicken and potatoes with pan juices halfway through.
- Rest a few minutes before serving. Garnish with parsley and lemon wedges.
Notes
For added flavor, marinate overnight. Serve with Greek salad, tzatziki, or warm pita bread.
