Description

These Greek meatball bowls are layered with juicy beef and turkey meatballs, Greek roasted vegetables, creamy homemade tzatziki, and lemon-garlic couscous. Perfect for meal prep or an easy Mediterranean dinner full of fresh flavor.


Ingredients

Tzatziki Sauce:

1/2 cup light sour cream

1/2 cup non-fat Greek yogurt

1/2 cup shredded English cucumber (pressed dry)

12 tsp dried dill

1/2 tsp garlic powder

1 tsp olive oil

1 tbsp lemon juice

1/4 tsp kosher salt

Greek Roasted Vegetables:

2 lbs mixed fresh vegetables (zucchini, bell peppers, onion, squash)

2 tbsp olive oil

1½ tbsp Greek seasoning

2 tsp dried oregano

1/2 tsp smoked paprika

Greek Meatballs:

1 lb extra lean ground beef

1 lb lean ground turkey

2 tsp kosher salt

2 tbsp dried oregano

1½ tsp garlic powder

1/2 tsp smoked paprika

1/2 cup panko breadcrumbs

Cooking spray

Couscous:

2 cups uncooked pearl couscous

1 tsp olive oil

1 tsp garlic powder

1 tsp kosher salt

2 tbsp lemon juice (optional)

Optional Additions:

Feta cheese

Chopped lettuce, cucumber, or tomato


Instructions

1. Shred the cucumber and squeeze out all excess water using cheesecloth.

2. In a bowl, mix Greek yogurt, sour cream, dill, garlic powder, lemon juice, olive oil, and salt to make the tzatziki. Chill.

3. Preheat oven to 425°F. Toss chopped vegetables in olive oil, Greek seasoning, oregano, and smoked paprika. Spread on a large sheet pan and roast for 20–25 minutes.

4. In a separate bowl, combine ground beef, turkey, salt, oregano, garlic powder, paprika, and breadcrumbs. Mix gently and form into 1 oz meatballs.

5. Place meatballs on a greased sheet pan and bake at 425°F for 10–12 minutes until golden and cooked through.

6. Cook couscous in boiling water with olive oil, garlic powder, and salt. Add lemon juice at the end for brightness.

7. Build the bowls: start with couscous, then add roasted vegetables, 3–4 meatballs, and top with tzatziki sauce. Garnish with feta or veggies as desired.

Notes

You can roast vegetables and cook meatballs at the same time by adjusting oven racks.

Tzatziki tastes best when made ahead and chilled for at least 1 hour.

Store each element separately in the fridge for easy meal prep.
