Description

Ingredients

4 boneless, skinless chicken breasts

1 cup feta cheese, crumbled

1/2 cup honey

1/4 cup olive oil

2 tbsp red wine vinegar

2 cloves garlic, minced

1 tsp dried oregano

1 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 lemon, sliced (for serving)


Instructions

1. In a bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper until smooth.

2. Place chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.

3. Seal and refrigerate for at least 30 minutes or up to 4 hours for deeper flavor.

4. Preheat oven to 400°F (200°C). Grease a baking dish lightly with olive oil.

5. Remove chicken from the marinade and place in the dish, discarding excess marinade.

6. In a small bowl, mix crumbled feta with a drizzle of olive oil, a pinch of salt, and black pepper.

7. Spoon the feta mixture evenly over each chicken breast.

8. Bake for 25–30 minutes or until the chicken reaches 165°F (75°C) internally and the feta is golden.

9. Optional: Broil for 2–3 minutes for a crispier topping.

10. Remove from oven and let rest for 5 minutes.

11. Garnish with chopped parsley and serve with lemon slices for a fresh finish.

12. Serve warm with sides like roasted vegetables or salad.

Notes

Marinate longer (up to 4 hours) for deeper flavor.

Substitute feta with goat cheese for a creamier texture.

Add sliced vegetables like bell peppers or zucchini to the baking dish for a one-pan meal.

For extra spice, include a dash of chili flakes in the feta topping.
