Description

Ingredients

4 boneless, skinless chicken breasts

1 cup feta cheese, crumbled

1/2 cup honey

1/4 cup olive oil

2 tablespoons red wine vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 lemon, sliced (for serving)


Instructions

1. Prepare Marinade: In a bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper until smooth.

2. Marinate Chicken: Place chicken in a resealable bag or shallow dish. Pour marinade over chicken and coat evenly. Refrigerate for 2–4 hours (minimum 30 minutes).

3. Prepare Feta Topping: In a small bowl, mix crumbled feta with a drizzle of olive oil, salt, and pepper. Set aside.

4. Preheat Oven: Preheat to 400°F (200°C). Remove chicken from marinade, letting excess drip off. Discard marinade.

5. Assemble: Place chicken breasts in a baking dish. Spoon feta mixture evenly over each piece.

6. Bake: Bake for 25–30 minutes or until chicken reaches 165°F (75°C) and feta turns golden.

7. Optional Broil: For extra color, broil for 2–3 minutes until feta browns lightly.

8. Rest and Serve: Let chicken rest for 5 minutes. Garnish with parsley and lemon slices. Drizzle with any pan juices before serving.

Notes

For deeper flavor, marinate chicken overnight.

Grill instead of baking for a smoky flavor; add feta just before serving.

Substitute goat cheese or blue cheese for feta for variation.

Add extra heat with cayenne or chili oil.

Serve with quinoa, couscous, or roasted vegetables for a complete meal.
