Description

Old School Chicken & Rice Casserole – creamy, hearty, and packed with homestyle flavor. A classic comfort dish made with chicken, soups, and parmesan cheese.


Ingredients

Scale

1 rotisserie chicken (4 cups cooked, chopped)

1 (10.5 oz) can unsalted cream of chicken soup

1 (10.5 oz) can cream of celery soup

1 (10.5 oz) can unsalted cream of mushroom soup

1/2 tsp onion powder

1/4 tsp garlic powder

1/4 tsp pepper

1 cup water

1 cup milk

2 cups instant rice, uncooked

3/4 cup grated parmesan cheese


Instructions

1. Preheat oven to 400°F. Lightly spray a 9×13-inch baking dish with cooking spray.

2. Remove skin and bones from rotisserie chicken, then chop the meat.

3. In a large bowl, mix chicken, soups, onion powder, garlic powder, pepper, water, milk, and rice until well combined.

4. Pour mixture into prepared baking dish and spread evenly.

5. Top with grated parmesan cheese.

6. Bake uncovered for 40–50 minutes until bubbly and golden.

7. Let rest for 5–10 minutes before serving.

Notes

Use unsalted soups to manage sodium. Add vegetables or cheddar for variety. Substitute half the milk with cream for extra richness.
