Description
One-Pan Cajun Chicken and Rice – a bold, Southern-inspired one-skillet meal made with juicy chicken, peppers, and seasoned rice.
Ingredients
1 lb boneless, skinless chicken thighs (or breasts)
1 tbsp olive oil
1 tbsp Cajun seasoning
½ tsp salt
¼ tsp black pepper
1 small yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 cup long-grain white rice
2 cups low-sodium chicken broth
1 tsp Cajun seasoning
¼ tsp smoked paprika (optional)
Chopped parsley or green onions for garnish
Lemon wedges, optional
Instructions
1. Toss chicken with Cajun seasoning, salt, and pepper.
2. Heat oil in a skillet over medium-high heat and sear chicken for 4–5 minutes per side. Remove and set aside.
3. Add more oil, sauté onion and bell peppers for 4–5 minutes.
4. Stir in garlic, cook 30 seconds.
5. Add rice and toast 1 minute.
6. Pour in broth, add Cajun seasoning and smoked paprika. Stir.
7. Nestle chicken into rice, cover, and simmer 20–25 minutes until rice is tender and chicken cooked.
8. Let rest 5 minutes, fluff rice, garnish, and serve.
Notes
Adjust spice level by reducing Cajun seasoning. Add shrimp or sausage for variety. Garnish with lemon for a fresh finish.
