Description
One Pot Chicken and Rice Recipe – a creamy, savory comfort dish made with juicy chicken, long-grain rice, and Parmesan cheese in one pan.
Ingredients
1½ lbs boneless, skinless chicken breasts, diced
2 tbsp olive oil
3 cloves minced garlic
1 tbsp Italian seasoning, divided
½ tsp onion powder
Salt and pepper to taste
2½ cups chicken broth
1 cup uncooked long-grain white rice
¾ cup heavy cream
⅓ cup grated Parmesan cheese
Instructions
1. Cut chicken into bite-sized pieces and season with 1 tsp Italian seasoning.
2. Heat olive oil in a skillet over medium-high heat and brown chicken for 5 minutes. Remove and set aside.
3. Add garlic to skillet and cook for 30 seconds.
4. Pour in chicken broth and rice, bring to a boil, then reduce heat to low. Cover and simmer 15–20 minutes.
5. Stir in heavy cream, Parmesan cheese, remaining seasoning, and onion powder.
6. Add chicken back in and stir to combine. Season to taste and serve hot.
Notes
Use thighs for juicier results. Add vegetables for variation. Substitute white wine for extra flavor. Reheat gently with milk or broth.
