Ingredients
2 sheets puff pastry, thawed
Flour for rolling
¼ cup vegan pesto, plus more for serving
¼ cup marinara, plus more for serving
5 oz vegan pepperoni (Trader Joe’s)
2 roasted red peppers from a jar, sliced
3 oz vegan feta, crumbled
Fresh basil, chopped
2 tbsp vegan butter, melted
½ tsp garlic powder
Everything bagel seasoning
Instructions
1. Thaw puff pastry on the counter for about an hour.
2. Preheat oven to 400°F and line a sheet pan with parchment paper.
3. Roll out both puff pastry sheets on a floured surface until they’re the same size.
4. Place one sheet on the baking tray. Spread pesto, then dollop marinara over it.
5. Add pepperoni, roasted red peppers, feta, and fresh basil evenly.
6. Top with the second puff pastry sheet and gently press. Score into 48 squares.
7. Mix melted butter with garlic powder. Brush over pastry and sprinkle with everything seasoning.
8. Bake for 20–25 minutes, until golden and puffed.
9. Cool slightly, cut through the scored lines, and serve with extra pesto and marinara.
Notes
Keep puff pastry cold while assembling to ensure a good rise.
Customize with other toppings like mushrooms, spinach, or olives.
Store leftovers in the fridge and reheat in the oven for crispiness.
