Description
Smothered chicken and rice combines juicy chicken, creamy sauce, and fluffy rice for a comforting, flavorful meal made on the stovetop.
Ingredients
2 lbs chicken thighs or breasts
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
2 tbsp olive oil
2 tbsp butter
1 small onion, diced
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 tsp dried thyme
1 tsp dried parsley
½ tsp salt
½ tsp black pepper
1 tsp cornstarch + 1 tbsp water (optional)
1½ cups long-grain white rice
3 cups water or chicken broth
Instructions
1. Season chicken with salt, pepper, garlic powder, onion powder, and paprika.
2. Heat olive oil in a skillet, sear chicken for 4–5 minutes per side, and set aside.
3. Melt butter, sauté onion until soft, stir in garlic for 30 seconds.
4. Add broth, cream, thyme, parsley, salt, and pepper; simmer for 5 minutes.
5. Mix cornstarch with water and add if thicker sauce is desired.
6. Rinse rice, cook in boiling water or broth for 15 minutes, then rest and fluff.
7. Return chicken to sauce, simmer 10–15 minutes.
8. Serve over rice and spoon sauce on top.
Notes
Add mushrooms or spinach for variety.
Use half-and-half for a lighter sauce.
Add red pepper flakes for heat.
Store leftovers separately for best texture.
