Description

Street Corn Chicken Casserole combines tender chicken, sweet corn, cream cheese, and spices into a creamy, cheesy baked dish.


Ingredients

Scale
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 8 oz cream cheese softened
  • 3 cups cooked shredded chicken
  • 3 cups corn frozen canned or roasted
  • 2 cups shredded cheddar or Mexican blend cheese divided
  • 1/2 cup cotija cheese or feta
  • 1 can diced green chiles
  • 1/4 cup fresh cilantro chopped
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Preheat oven to 375°F.
  2. Mix mayonnaise, sour cream, and cream cheese until smooth.
  3. Add shredded chicken, corn, half of the cheddar cheese, cotija, green chiles, cilantro, chili powder, smoked paprika, garlic powder, salt, pepper, and lime juice. Stir until combined.
  4. Pour mixture into a greased baking dish.
  5. Top with remaining cheddar cheese.
  6. Bake until bubbly and golden brown, about 25 to 30 minutes.
  7. Remove from oven, garnish with fresh cilantro, and serve hot.

Notes

Grill corn before adding for more flavor. Swap chicken with ground beef, turkey, or beans for variation.
