Description
Street Corn Chicken Casserole combines tender chicken, sweet corn, cream cheese, and spices into a creamy, cheesy baked dish.

- 1 cup mayonnaise
- 1 cup sour cream
- 8 oz cream cheese softened
- 3 cups cooked shredded chicken
- 3 cups corn frozen canned or roasted
- 2 cups shredded cheddar or Mexican blend cheese divided
- 1/2 cup cotija cheese or feta
- 1 can diced green chiles
- 1/4 cup fresh cilantro chopped
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- Preheat oven to 375°F.
- Mix mayonnaise, sour cream, and cream cheese until smooth.
- Add shredded chicken, corn, half of the cheddar cheese, cotija, green chiles, cilantro, chili powder, smoked paprika, garlic powder, salt, pepper, and lime juice. Stir until combined.
- Pour mixture into a greased baking dish.
- Top with remaining cheddar cheese.
- Bake until bubbly and golden brown, about 25 to 30 minutes.
- Remove from oven, garnish with fresh cilantro, and serve hot.
Notes
Grill corn before adding for more flavor. Swap chicken with ground beef, turkey, or beans for variation.
