Ingredients

<p>2 large eggs</p><p>1/2 cup vegetable oil</p><p>1/2 cup brown sugar</p><p>1/4 cup white sugar</p><p>1 tsp vanilla extract</p><p>1 cup finely grated carrots</p><p>1 cup all-purpose flour</p><p>1/2 tsp baking soda</p><p>1/2 tsp baking powder</p><p>1/2 tsp ground cinnamon</p><p>1/4 tsp salt</p><p>Optional: 1/4 cup chopped walnuts or raisins</p><p>100 g cream cheese (softened)</p><p>2 tbsp soft butter</p><p>1/2 cup powdered sugar</p><p>1/4 tsp vanilla extract</p>


Instructions

<p>1. Preheat oven to 175°C / 350°F.</p><p>2. Grease and line an 8-inch pan with parchment paper.</p><p>3. Whisk eggs, oil, sugars, and vanilla until smooth.</p><p>4. Add grated carrots and mix gently.</p><p>5. Combine flour, baking soda, baking powder, cinnamon, and salt.</p><p>6. Fold dry mixture into wet ingredients.</p><p>7. Pour batter into the pan and bake 32–35 minutes.</p><p>8. Cool completely before frosting.</p><p>9. Beat cream cheese, butter, sugar, and vanilla until smooth.</p><p>10. Spread frosting evenly over cooled cake.</p>
